The Certificate in General Patisserie and Confectionary Level 3 is a mixture of theory and practical lessons preparing, cooking and finishing a range of desserts.

The course runs for 8 hours a week over 34 weeks.

    • Patisserie and Confectionary Level 2
    • Interview and assessment
  • What will I study?

    This course consists of the following modules:

    • Produce dough and batter products
    • Produce petits fours
    • Produce paste products
    • Produce hot, cold and frozen desserts
    • Produce biscuits, cakes and sponges
    • Produce display pieces and decorative Items
  • How will I be assessed?

    You will be assessed via:

    • Practical craft assessments
    • Theoretical written question papers
